There is a SPARK renderer for Irrlicht, and Irrlicht supports OpenGL ES. Maybe that's the simplest way to do it, if your app is not pure OpenGL at the moment.
Else, I think there are no huge difference in the "way of rendering smth" between OGL and OGL ES. There is already a renderer for OpenGL, maybe you could adapt it for OpenGL ES. In case you don't want to use Irrlicht, these two links might help you:
